Spaghetti Squash Pizza Bake
Makes 5 servings

Ingredients
1 large spaghetti squash – use 3 ½ cups cooked squash
1/2 cup shallots or onion, chopped
4 minced garlic cloves
1 ¼ lb. lean grass-fed ground beef
2 tsp. Italian seasoning
¼ tsp salt
½ tsp pepper or less
10 slices nitrite-free turkey pepperoni
2 eggs
2 cups no sugar added marinara such as Rao’s
1/2 cup shredded part-skim mozzarella
fresh chopped basil, for garnish

Note: I cooked the meat with the condiments, added the eggs whipped slightly to the sauce and squash. Then stirred in the cooked meat, put turkey pepperoni on top and baked for 40 minutes or so at 350 or until bubbling. Added cheese to top and baked another 15-20 minutes
